Okay, so after the insanity of the past month and a half, I am back.
This isn't really a bread post but it is a really yummy chocolate chip cookie recipe that I concocted and seems to have great results.
( I am really bad with writing and following recipes so I am hoping to write this down before I forget exactly what I did)
1/2 C coconut oil
1/2 C earth balance spread
1/2C white sugar
1/2C brown sugar
2Tbsp of ground flax meal
6 Tbsp of water
1 tsp of vanilla extract
1/2 tsp of almond extract
2 1/2 C flour
1tsp baking powder
1/2 tsp baking soda
pinch of salt
1/2 C chocolate chips
Preheat oven to 350 degrees
First thing I do is measure out my flax meal into a small bowl and add the water to it (1 Tbsp of meal + 3Tbsp of water = 1 egg)
Then I blend the fats and the sugars, by this point the flax meal is gel like and ready to be added to the mix, I also add the extracts at this time.
Then I add the dry ingredients, the flour, baking powder, baking soda, and salt.
Finally I add 1/2 C of chocolate chips.
These cookies don't spread a whole lot and I made some small ones for snacking on and some bigger ones with the intention of making ice cream sandwiches with but as this recipe is egg free it would also be great to freeze in little chunks to add to homemade ice cream!
